In OpenOffice, it's File=>Printer Settings. The other option is
with the CUPS web interface, I believe there's a setting for the
printer defaults.  However, I set this up awhile ago, and I'm not sure
which I used.  I do know that for awhile, I had the oppositie problem,
living in the US, OO seemed to insist on A4.
