Yeah, especially if you automate this somehow with a PXE boot image. :)
2. Cloning HDD for forensic use ( while it is stilling running, no need to reboot with a LiveCD )
Well, you'd better at least mount all of the source drive's partitions readonly, or this is likely to produce something less than stable.
