No, for that you want modify-headers. But UA switcher has convenient
button for one of your tool bars that lets you switch with a couple of
clicks.

No, but it really makes little difference, unless you need to get
the headers exact from some reason. Non-official sites will use
URL-rewriting for docomo phones, which will work just fine, and he won't
be able to access official sites.
