Well, I'm not intimately familiar with RSS, but one thing that's fairly
obvious about the document vs. channel distinction is the number of hits
you'll get on your site.

If you put two channels in one document, people querying your site will
have to download the new information for both channels, even if they're
only interested in one.

If you use two separate documents, people interested in both will have
to query your site twice each time they want to check for updates.
