Since I am known as a champion of the "anything-but-sendmail" MTA, I should mention my latest favorite. Exim <URL http://www.exim.org/> is very easy to configure, has some very good documentation, and a helpful author. It is also more "traditional" in handling configuration and things like .forward files than my previous favorite, Qmail <URL http://www.qmail.org/> Exim also comes with a simple X monitoring tool that allows you to watch the status of Exim and the various message queues.
